Ingredients 1 tbsp rapeseed oil 2 onions , sliced 2 large garlic cloves, chopped 2 large courgettes , diced (400g) 1 red and 1 yellow pepper , deseeded and roughly sliced 1 large aubergine , sliced across length or width for maximum surface area 400g can chopped tomatoes 2 tbsp tomato purée 2 tsp vegetable bouillon 15g fresh basil , chopped plus a few leaves 6 wholewheat lasagne sheets (105g) 125g vegetarian buffalo mozzarella, chopped Method Heat the oil in a large non-stick pan and fry the onions and garlic for 5 mins, stirring frequently until softened. Tip in the courgettes, peppers and tomatoes with the tomato purée, bouillon and chopped basil. Stir well, cover and cook for 5 mins. Roasted red pepper & tomato soup with ricotta

Ingredients 400g tomatoes , halved 1 red onion, quartered 2 Romano peppers, roughly chopped 2 tbsp good quality olive oil 2 garlic cloves, bashed in their skins few thyme sprigs 1 tbsp red wine vinegar 2 tbsp ricotta few basil leaves 1 tbsp mixed seeds, toasted bread, to serve Method Heat oven to 200C/180C fan/gas 6. Put the tomatoes, onion and peppers in a roasting tin, toss with the oil and season. Nestle in the garlic and thyme sprigs, then roast for 25-30 mins until all the veg has softened and slightly caramelised. Squeeze the garlic cloves out of their skins into the tin, strip the leaves off the thyme and discard the stalks and garlic skins. Mix the vinegar into the tin then blend everything in a bullet blender or using a stick blender, adding enough water to loosen to your preferred consistency (we used around 150ml). Rustle up this teriyaki tofu served with wholegrain rice in just 30 minutes. Easy and low in fat, this vegetarian dish is perfect for busy weeknights Ingredients 150g wholegrain rice 50ml soy sauce 2 tbsp mirin ½ tsp grated ginger 1 tsp honey 350g firm tofu (we used Cauldron) 1 bunch spring onions , ends trimmed 2 tsp sunflower oil ½ tsp sesame seeds 1 red chilli, sliced (optional) Method 1.Cook the rice according to pack instructions. Pour the soy sauce, mirin, ginger and honey into a small saucepan and add 50ml water. Bring to a simmer and cook for around 5 mins or until slightly thickened. Remove from the heat and set aside until needed. 2.If your tofu doesn’t feel very firm, you’ll need to press it. To do this, wrap the block of tofu in a few layers of kitchen paper, then weigh it down with a heavy pan or tray for 10-15 mins – the longer you press it, the firmer it will be. INGREDIENTS 1 tbsp sunflower oil 1 onion, sliced 4 tbsp madras curry paste (we like Patak’s) 1 butternut squash, peeled, deseeded and cut into 2cm pieces 1 cauliflower, cut into florets 250g frozen peas 200g spinach 5 tbsp full-fat greek yogurt 2 x 250g packs ready cooked basmati rice (we used Tilda) 50g fresh coriander, roughly chopped, to serve (optional) Zest and juice 2 limes, plus wedges to serve METHOD 01.Heat the oil in a large, deep frying pan over a medium heat. Fry the onion for 4-5 minutes, then add the curry paste and fry for 1 minute more. Add the squash and cauliflower and fry for 4 minutes. Add 1 litre water and simmer for 45 minutes or until the veg are tender.  02.Stir in the peas and spinach to wilt.
